Ingredients:
- Oats (rolled or instant) – ½ cup
- Water – ~⅓ to ½ cup (as needed to make batter)
- Curd (optional) – 1 tbsp (for slight tanginess & softness)
- Mixed vegetables – ½ cup (finely chopped carrots, capsicum, onion, tomato, spinach, etc.)
- Green chili – 1 (finely chopped, optional)
- Coriander leaves – 1 tbsp (chopped)
- Cumin seeds – ¼ tsp
- Turmeric powder – ⅛ tsp
- Red chili powder – ¼ tsp (adjust to taste)
- Salt – to taste
- Oil or ghee – 1 tsp (for cooking)
Instructions:
- Grind oats in a blender to make a coarse flour.
- In a bowl, mix oat flour, curd (if using), water, turmeric, red chili powder, salt, and cumin seeds to form a smooth batter (pancake-like consistency).
- Mix in the chopped vegetables, green chili, and coriander leaves.
- Heat a non-stick or cast-iron pan and grease it lightly.
- Pour the batter and spread it like a pancake (~6-inch diameter).
- Drizzle a few drops of oil around the edges.
- Cook on medium flame for 2–3 minutes per side, or until golden brown and cooked through.
