Ingredients:
- 2 ripe bananas, mashed
- 1 cup rolled oats
- 1/4 cup peanut butter (or almond butter)
- 1/4 cup honey or maple syrup (optional, for sweetness)
- 1/2 teaspoon vanilla extract
- 1/2 teaspoon cinnamon (optional)
- 1/4 cup chocolate chips or nuts (optional)
Instructions:
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, mix the mashed bananas, oats, peanut butter, honey (if using), vanilla extract, and cinnamon until well combined.
- Fold in the chocolate chips or nuts if you’re using them.
- Scoop tablespoon-sized portions of the mixture onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes, or until the edges are golden.
- Let cool on the baking sheet for a few minutes before transferring to a wire rack.
