Ingredients:
- 1 lb chicken
- 8 cups chicken broth
- Onion, carrots, celery, garlic
- Bay leaf, thyme, salt, pepper
- Fresh parsley (optional)
Instructions:
- Combine chicken, broth, vegetables, and seasonings in a pot.
- Bring to a boil, then simmer for 30-40 minutes until chicken is cooked.
- Remove chicken, shred meat, discard bones, return to pot.
- Season with salt and pepper.
- Serve hot, garnished with parsley if desired.
