Ingredients:
- 2 cups cooked cowpeas (you can use canned cowpeas, drained and rinsed)
- 1 small red onion, finely chopped
- 1 red bell pepper, diced
- 1 cucumber, diced
- 1-2 tomatoes, diced
- Fresh cilantro or parsley, chopped (about 2-3 tablespoons)
- Juice of 1-2 lemons or limes
- 1 tablespoons olive oil
- Salt and pepper to taste
Instructions:
- If using dried cowpeas, cook them according to package instructions until tender. If using canned cowpeas, drain and rinse them thoroughly.
- In a large mixing bowl, combine the cooked cowpeas, chopped red onion, diced bell pepper, cucumber, and tomatoes.
- Add the chopped cilantro or parsley to the bowl.
- In a small bowl, whisk together the lemon or lime juice and olive oil. Season with salt and pepper to taste.
- Pour the dressing over the cowpea mixture and toss everything together until well combined.
- Let the salad sit for about 15-20 minutes before serving to allow the flavors to meld together.
