Ingredients:
- 100g paneer (Indian cottage cheese), crumbled or diced
- 1 small onion, finely chopped
- 1 small tomato, finely chopped
- 1/2 green bell pepper (capsicum), finely chopped
- 1 green chili, finely chopped (optional, adjust to taste)
- 1/2 teaspoon cumin seeds
- 1/4 teaspoon turmeric powder
- 1/2 teaspoon garam masala
- Salt to taste
- Fresh coriander leaves, chopped, for garnish
- 1 tablespoon cooking oil
Instructions:
- If not already crumbled, crumble or dice the paneer into small pieces.
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onion, green chili (if using), and sauté until onions turn translucent.
- Add turmeric powder, garam masala, and salt. Mix well and cook for another minute.
- Add the chopped tomatoes and bell pepper. Cook until the tomatoes are soft and the mixture is slightly dry.
- Add the crumbled or diced paneer to the pan. Mix gently to combine with the spices and vegetables. Cook for another 2-3 minutes until the paneer is heated through.
- Remove from heat. Garnish with chopped coriander leaves.
- Enjoy this paneer filling as a standalone dish.
- Serve with a side of salad or steamed vegetables for a balanced meal.
- Use as a filling for lettuce wraps or stuff into hollowed-out bell peppers for a low-carb option.
