Ingredients:
- 1/4 cup ragi flour (finger millet flour)
- 1/4 cup mixed vegetables (such as carrots, peas, bell peppers, etc., finely chopped)
- 1 tablespoon finely chopped onion
- 1 green chili, finely chopped (optional)
- Salt to taste
- Water, as needed
- Oil for cooking
Instructions:
- In a mixing bowl, combine ragi flour, chopped vegetables, onion, green chili (if using), and salt.
- Gradually add water and mix well to form a smooth batter of pouring consistency. Let it rest for about 10-15 minutes.
- Heat a non-stick or cast-iron skillet over medium heat. Once hot, lightly grease it with oil.
- Pour a ladleful of the batter onto the skillet and spread it thinly in a circular motion to form a dosa.
- Drizzle a little oil around the edges of the dosa. Cook until the edges start to brown and the dosa becomes crisp.
- Fold the dosa and serve hot with chutney or sambar.
