Ingredients:
- 1 cup dates, pitted and chopped
- 1/2 cup nuts (e.g., almonds, cashews, walnuts), chopped
- 1/4 cup seeds (e.g., sunflower seeds, pumpkin seeds)
- 1/2 cup desiccated coconut (optional, for added flavour)
- 1 tbsp ghee or coconut oil
- 1/2 tsp cardamom powder (optional, for flavour)
- 1-2 tbsp honey or maple syrup (optional, if you like it sweeter)
Instructions:
- Prepare the Dates: Chop the dates finely. If they’re too sticky, you can lightly oil your hands to make them easier to handle.
- Toast the Seeds: Heat a pan over medium heat and toast the seeds (and nuts, if using) until they’re golden brown and fragrant. Be careful not to burn them.
- Cook the Dates: In a pan, heat the ghee or coconut oil over medium heat. Add the chopped dates and cook for about 5 minutes, stirring frequently until they break down and become a thick, sticky mixture.
- Combine Ingredients: Add the toasted nuts and seeds to the date mixture. If using desiccated coconut, add it now. Stir well to combine. You can also add cardamom powder and honey/maple syrup if desired.
- Cool and Shape: Allow the mixture to cool slightly, making it easier to handle. Once it’s cool enough to touch, shape it into small balls or discs using your hands.
- Set and Serve: Let the laddus cool completely. They will firm up as they cool. Store them in an airtight container.
