Ingredients:
- 2 cloves garlic, minced
- 1/4 cup mixed vegetables, chopped
- 1 cup vegetable broth or water
- 1/4 tsp dried thyme
- Salt and pepper to taste
- 1 tsp olive oil
- Fresh parsley for garnish (optional)
Instructions:
- Sauté garlic in olive oil until fragrant.
- Add mixed vegetables and cook for 2-3 mins.
- Pour in broth/water, add thyme, salt, and pepper.
- Simmer for 10-15 mins until vegetables are tender.
- Adjust seasoning if needed.
- Serve hot, garnished with parsley.
