Ingredients:
- Whole wheat roti or tortillas
- Assorted vegetables (e.g., carrots, bell peppers, cabbage, spinach, )
- Olive oil
- Salt, pepper, and other preferred spices
- Optional: tofu, or paneer
Instructions:
- Chop vegetables into thin strips and sauté with olive oil, salt, pepper, and spices until tender-crisp.
- Place a small amount of cooked vegetables (and optional protein) on a pastry sheet or tortilla. Roll tightly and seal edges with water .
- Bake pastry rolls at 375°F (190°C) for 15-20 mins until golden brown. Or, fry tortilla rolls in a pan with oil until crispy on all sides.
- Serve: Let cool slightly and serve with dipping sauce of choice (e.g., salsa, guacamole).
